Either,
a) the/a Fungal Hive Mind exists within the lab rats, and the lab rats have escaped or are otherwise co-operating beyond her expectations of rat behaviour,
Or,
b) the lab rats have rooted and sprouted like the rodents where she first encountered the fungus.

Either way, this bodes ill for Alice & co.
